Broccoli Casserole Recipe

Ingredients: 2 packages frozen chopped broccoli (or l big bag) 1 stick margarine 2 cups grated cheddar cheese (or Velveeta) 1/4 pound Ritz crackers, crushed salt to taste 1 teaspoon curry powder, optional
Preparation: Cook broccoli according to package directions. Drain. Pour drained broccoli back into cooking pan and salt to taste. Stir in cheese and 1/2 of the margarine until melted. Pour into buttered casserole. Melt remaining margarine; stir in crackers. Pour cracker mixture over broccoli and bake for 25 minutes at 350 degrees.
Note: The original recipe doesn’t call for curry powder, but I like that flavor with the broccoli. My friend, Diane C. gave me that idea.
Also, I’ve used saltine crackers, cheese crackers etc. Any of them work fine. This is usually a Thanksgiving staple because you can make it the day before, place the buttered cracker crumbs in a zip lock bag and put them on top prior to baking.
Also, you can use frozen mixed vegetables instead of broccoli.
