Ingredients:
4 eggs 2 cups sugar 1 1/2 cups oil 1 teaspoon Cinnamon 2 cups Self Rising Flour 1 teaspoon Vanilla 2-3 drops Black Walnut Flavoring 1 cup grated Carrots 1 cup chopped Black Walnuts
Preparation:
Mix together: 4 eggs 2 cups sugar 1 1/2 cups oil
Add to above: 1 teaspoon cinnamon 2 cups self rising flour 1 teaspoon vanilla 2-3 drops black walnut flavoring 1 cup grated carrots 1 cup chopped black walnuts
Bake in greased tube pan at 350 degrees for 1 1/2 hours.
Glaze: 1 cup white sugar 1/2 cup buttermilk 1/2 teaspoon baking soda 1 teaspoon white corn syrup
Bring glaze mixture to a boil. It will be very foamy. Spoon over carrot cake while cake and glaze are still hot.
Let cake cool in pan before removing.
Note: To make buttermilk: put 1/2 tablespoon vinegar or lemon juice in mixing cup. Add enough milk to make 1/2 cup.
Let sit on counter for 5 minutes before using.
