Chicken Breast Southwestern

Ingredients:

4-6 boneless skinless chicken breasts
8 slices cheddar cheese
1 cup Prepared Salsa (store bought)
2/3 cup Oil
1/3 cup Lime or Lemon Juice
2 tablespoons Chopped Green Chilies
1 teaspoon Garlic Powder

   

Preparation:

Marinade:
2/3 cup oil
1/3 cup lime juice
2 tablespoons chopped green chilies
1 teaspoon garlic

Put chicken breasts in marinade for 45 minutes, turning once.
Grill chicken 7 minutes. Turn and grill for 8 more minutes.

Top each breast with 2 slices of cheese.
Continue grilling until cheese begins to melt.

Serve with salsa.



Note: I usually use lemon juice instead of lime juice. Plus, I only use a half slice of cheese on each breast instead of 2 slices. The hot pepper cheese is good instead of cheddar. Plus, I usually use the whole can of green chilies instead of just 2 tablespoons. I’ve used fat free cheese before also.
