Ingredients: 1 cup cooked rice 1 cup milk 2 1/2 tablespoons sugar dash of salt 1 tablespoon butter or margarine 1/4 teaspoon vanilla extract
Preparation: Combine rice, milk, sugar, salt and butter.
Cook over medium heat until thickened, about 20 minutes, stirring often.
Add vanilla. Serve hot or cold.
Note: I make this a lot, especially when I’m in the mood for a little something sweet. Just use leftover rice, or make a small amount of minute rice in the microwave.
I usually add a little more sugar. Also, I sometimes add raisins and a little cinnamon. I’ve used skim milk and equal packets before and it tasted fine too.
