Ingredients: 1 can French style green beans, drained 1 can baby size peas, drained 1 can shoepeg corn, drained 1 large green pepper, diced 1 onion, diced 4 stalks celery, diced 1 small jar pimento
Dressing: 1/2 cup vinegar 1/2 cup oil 1/2 cup sugar 1/2 tablespoon salt 1/2 tablespoon water
Preparation: Mix together.
Note: I usually fix this at Thanksgiving and Christmas.
It makes a great side dish. Plus, you can keep it in the refrigerator for a week or two which really helps when you’re fixing a big dinner.
I usually leave out the shoepeg corn, I’m not sure why!
