White Chocolate Strawberry Pie Recipe

Ingredients: 5 squares (1oz each) white baking chocolate, divided 2 tablespoons milk 1 (3oz) package cream cheese, softened 1/3 cup powdered sugar 1 teaspoon grated orange peel 1 cup whipping cream, whipped 1 graham cracker crust 2 cups sliced fresh strawberries
Preparation: In a microwave or double boiler, melt four squares of chocolate with milk. Cool to room temperature. Meanwhile, beat cream cheese and sugar in a mixing bowl until smooth. Beat in orange peel and melted chocolate. Fold in whipped cream. Spread into crust. Arrange strawberries on top. Melt remaining chocolate; drizzle over berries. Refrigerate for at least one hour. Store in the refrigerator.
Note: I got this recipe from a cooking magazine I take. I first made it when I had my foot surgery and was using crutches and a wheelchair in the kitchen. I don’t recommend cooking that way at all! The one thing I would change in this recipe is the white chocolate that they want you to drizzle on the top of the pie. I found that it just got very hard and made the pie difficult to cut and eat. If I were you, I’d sprinkle a little powdered sugar over the strawberries to look pretty. It’s a delicious pie and not hard to make. I buy my white chocolate at Save-A-Lot grocery store where it is very inexpensive and works just as well as the more expensive white chocolate.
